THE HINGEL (Turkish Ravioli)

For Dough

5 Cup Flour
2 Eggs
2 Dessertspoon Salt
Water

Filing Ingredient

5-6 Potatoes
1 Large Onion
Salt
Pepper

For Your Food Service

Butter
Red Pepper
Garlic
Yoghurt

Directions/Preparations:

5 cups flour, 2 eggs, salt put in pot, for kneading. Later, add water as gradually in mixture. Finally, you should get a stiff dough. The dough is covered with a damp cloth and left for 15-20 minutes.

While the dough is rested, the hıngel's inner mortar is prepared. After the potatoes are peeled, they are boiled. Onions are minced. Potatoes are crushed. Later, onions, salt, and pepper are added in it.

The resting dough is separated into two lump. The dough is spread with a rolling pin on the counter until thin enough. Round pieces are cut with help of a water glass over spreading dough.

We put potato with inner mortarinside them and close rounded dough edges. The prepared hıngels is thrown into the boiling water and is sufficiently scalded, then filtered with aid of a strainer.

The Hıngel is taken on a serving plate and poured red pepper with melted butter. Then it is served with garlic yoghurt.
