Ingredients
30 brain brains
500 grams of milled cork fish meat (* can use other fish)
300 grams of tapioca starch / starch
65 ml Santan kara size
65 ml Ice cold water
1 egg
1 stalk of thinly sliced leeks
Sufficient banana leaves to wrap
Ground spices:
1/2 teaspoon pepper
2 tablespoons coarse salt (* if fine salt 1 tbsp)
1 tbsp sugar
3 cloves of red onion
2 cloves of garlic
Step
90 minutes
Make sure the milled fish is not hollow, then add all the spices, eggs, spring onions, coconut milk, and ice water. Stir until completely dull using a wooden / plastic sponge.
Then add the tapioca starch slowly, stirring until smooth.
Prepare a bit of banana leaf, then take 1 tbsp of dough and flatten lengthwise.
Next the banana leaves rolled and folded both the right and left sides. Steples or lid using a stick at each end. Perform until the dough is finished.
Then prepare a teflon / grill, use a small flame. Put the brain brain that has been wrapped on teflon, neatly arranged. Flip by 3-5 minutes for approximately 20 minutes.
