Rings

Can make up to: 8 servings
INGREDIENTS:
half cup all-purpose flour
quarter cup cornstarch
two tablespoons dry potato flakes
quarter teaspoon cayenne pepper, or to your preference
one cup chilled club soda
two cups panko bread crumbs, or as required
two cups vegetable oil for frying
two large sized onions, slice into quarter-inch thick slices and separated into rings
INSTRUCTIONS:
Preparation Period: 10 minutes
Cooking Period: 20 minutes
Prepared In: 30 minutes
Beat together flour, cornstarch, dry potato flakes, and cayenne pepper in a large sized bowl. Beat in club soda to make a soft batter.
Put panko bread crumbs in a shallow dish.
Heat up the oil in a deep fryer or large saucepan to 350 degrees F
Put a few onion rings at a time into the dish of batter and turn to coat all sides with batter.
Eliminate onion rings from batter and put into pan of panko bread crumbs; turn to coat completely with crumbs.
Cook a few rings at a time in the hot oil till golden brown, about two to three minutes.
