Hi Steemians !!
How have you been ? Before you scroll down and check the ingredients and cooking process down below, I must warn you that this is not a recipe for faint hearted !! Chunks of pork meat and potatoes cooked in a spicy onion gravy, is a recipe that most of the Assamese people like.. But if you are brave enough to deal with the long cooking time that this recipe demands, then you are in for a delicious treat !!
Ingredients
1000 gm boneless pork
6 medium size onions chopped
1 1/2 teaspoon Garam masala
2 Bay leaves
2 Dried red chillies
4 Green chillies
4 medium halved potato
1 tbsp Ginger-garlic paste
1 & 1/2 teaspoon Cumin
1 & 1/2 teaspoon Coriander
10 Black pepper
6 Green cardamom
1 inch cinnamon stick
3/4 cup mustard oil
1 teaspoon turmeric powder
Salt
Step 1 : Marination
For marination, wash and clean the boneless pork and bring together turmeric powder, salt, mustard oil & Garam Masala. Mix all the ingredients. Let it rest for about 6 hours.
Step 2
Add 1 & 1/2 teaspoon Cumin, 1 & 1/2 teaspoon Coriander, 10 Black peppers into the blender. let the blender go for 2 minutes. You will get Cumin-Coriander-Black pepper powder. Chop 6 medium size onions into small pieces.
Step 3
Now, heat 1 tbsp mustard oil in a wok. Add Cumin-Coriander-Black pepper powder to it. Then add chopped onions and stir it for few minutes. Add salt and ginger-garlic paste and fry it till it becomes golden brown.
Step 4
After frying the onions, throw them into the bowl of a food processor. Add 4 green chillies. Turn on the switch and watch as the fried onions and green chillies turn into a thick paste. Keep them aside to cool down.
Step 5
Heat 2 tbsp mustard oil in a wok. Fry the halved potatoes till they turn golden brown. Keep them aside.
Step 6
Now, for cooking the pork, heat mustard oil in another wok. Add in the Bay leaves, dried red chillies & cinnamon stick and fry it for few seconds. Add marinated pork and cook it till it becomes brownish yellow in colour .
Step 7
Add the onion paste and cook it for few more minutes. Add some water and leave it for about 15 minutes. Cook it till the gravy becomes brown
Step 8
After the gravy turns brown, add in two cups of water and pressure cook the whole thing for 8-9 whistles . Open the lid and add potato. Again pressure cook it of 4-5 whistles.
Enjoy your dry pork meat curry with steamed or flavoured rice!!
