It’s easy and gluten free!

Overall work time: about 15 minutes.
Time before completion: 5 hours plus. (Don't worry - most of the time is idle sitting in oven.)
List of Ingredients:
2 cups Raw Walnuts
1 cup Raw Almonds
1/2 cup Raw Pumpkin Seeds
2 tablespoons Coconut Flour
3 teaspoons Cinnamon
¾ teaspoon Ground Ginger
½ teaspoon Nutmeg
½ teaspoon Salt
2 tablespoons Coconut Oil
4 ounces Maple syrup
1 cup Apple Sauce
8 ounces Cranberries

Preheat oven to 325 degrees.

2 cups raw walnuts, chopped.
You can buy chopped walnuts, but Trader Joe’s doesn’t sell chopped Organic walnuts.

1cup raw almonds, chopped. I start with whole almonds for the same reason above.

½ cup raw pumpkins seeds, chopped.
You don’t need to chop them, but I do it anyway.

At least 2 tablespoons coconut flour.

3 teaspoons cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt

In a large bowl, mix all dry Ingredients except Cranberries thoroughly.

In a sauce pan, warm and mix wet ingredients together.
2 Tablespoons Coconut Oil
4 ounces Maple Syrup.
1 cup Apple Sauce.

Pour wet onto dry ingredients and mix thoroughly.

Spread mixture onto cookie sheet covered with parchment paper.

Place cookie sheets in oven for 15 minutes, remove, mix in separate bowl and return to oven for an additional 15 minutes. This will keep the granola from burning.

Remove and remix.

Return to oven.

Remove granola and turn off oven. Add 8 ounces of Cranberries to the mixture.

Mix thoroughly.

Return cookie sheets to oven to finish off the drying process. This could take 5 hours or even overnight. It will be perfectly fine. Just don’t forget about it and preheat the oven for another project, like I have done.

When dry, transfer ingredients into clean dry bowl. Mix the granola a little bit then transfer into desired containers. This recipe makes about 3 quarts.

Tips: During the first 30 minutes, I do not clean the mixing bowl until after I mix the cranberries in and transfer mixture back into the oven. This saves a little time.

Try raisins instead of cranberries. I prefer cranberries.

You may also add ¼ of a ripe banana to the wet ingredients. A little banana flavor goes a long way.

Stick pretty close to the amounts of spices that I mentioned. Everything else…approximate is good enough.

Remember, if the mixture is too wet, it will just take longer to dry. After five hours check the mixture and if it is still moist, bring the oven up to a warm temperature and shut it off once again. Be careful not to overcook the granola. Enjoy as a snack or with your favorite milk!
