Soba
Recipe Servings: 4

Ingredients
one (eight ounce) package dried soba noodles
one cup prepared dashi stock
quarter cup soy sauce
two tablespoons mirin
quarter teaspoon white sugar
two tablespoons sesame seeds
half cup cutted green onions
Instructions:
Bring a lightly salted pot of water to a boil. Put soba noodles; cook, mixing at times, till soft, five to eight minutes. Strain. Rinse with cold water to speed up cooling process.
Mix dashi, soy sauce, mirin, and white sugar in a small saucepan; bring to a boil. Eliminate from heat and cool to room temperature, about twenty-five minutes.
Put noodles with sesame seeds and divide among four serving dish. Spoon dashi sauce over noodles. Top with green onions and nori.
