Pumpkin Mochi
Ingredients:
two and half cups mochiko
two teaspoons baking powder
two cups white sugar
four eggs
one (29 ounce) can pumpkin puree
one (14 ounce) can sweetened condensed milk
one cup butter
two teaspoons vanilla extract
Instructions:
Sift together the mochiko, baking powder, and sugar in a large bowl. Mix together the eggs, pumpkin puree, condensed milk, butter, and vanilla extract in a separate bowl. Mix the egg mixture into the mochiko mixture. Add into the prepared dish. Bake in preheated oven for one hour. Allow to cool before serving.
