Miso Soup
Ingredients:
one tablespoon finely chopped wakame
four cups water
two teaspoons dashi granules
three tablespoons miso paste
four ounces silken tofu, cubed
two green onions, sliced on the bias
Instructions:
Place wakame in a fine-mesh sieve and soak in some cold water for ten minutes. Combine four cups water and dashi granules in a saucepan and bring to a boil over medium fire. Add miso paste and whisk to dissolve. Add wakame and simmer for three minutes. Divide tofu between four serving bowls. Ladle miso soup on top and garnish with green onions.
