Recipes From Japan #93
Rice Omelet
Recipe Servings: 1
Preparation Period: 5 Minutes
Cooking Period: 15 Minutes
Total Cooking Period: 20 Minutes
Ingredients
one cup cooked white or brown rice
two thin slices cooked ham, cubed
two tablespoons ketchup
one slice processed cheese food
two eggs
salt and pepper to your preference
one tablespoon ketchup
quarter teaspoon chopped fresh parsley
Instructions:
Heaten up the pan over medium heat, and coat with cooking spray. Put the cooked rice, two tablespoons ketchup, ham, and cheese, if using. Cook and mix till the ingredients are well mixed and heated through, about eight minutes. Pick the mixture onto a serving bowl and shape into an oval.
In a pan, beat eggs and salt and pepper. Heaten up a small skillet coated with cooking spray over medium heat. Put egg mixture; cook over medium heat. As eggs set, lift edges, letting uncooked portion flow underneath. Make use of a spatula to gently fold the eggs into a cocoon shape. When eggs are completely set, eliminate from the heat.
Put the omelet on top of the rice and run a knife length-wise through the top layer of the omelet. It should open like a butterfly and drape over the rice. Top with the final tablespoon of ketchup and a sprinkle of parsley.
