SALMON CUTLETS WITH CORIANDER AND LIME BUTTER

Prep time: 15 minutes

4 serves

Yum – buttery herb sauce over fresh salmon fillets – serve it up with a crisp green salad.

INGREDIENTS

4 salmon cutlets

¾ cup of butter – softened

2 teaspoons of lime juice

2 teaspoons of lime zest – finely grated

2 tablespoons of coriander – chopped finely

cracked pepper

a crisp green salad to serve

METHOD

In a bowl, combine butter, coriander, zest, juice and black pepper.

Leave in the fridge until it is ready to use.

In a non-stick fry pan over a medium flame, heat a little oil and cook your salmon to your liking.

Serve up on plates with a dollop of butter on top.

Add crisp salad – enjoy.
