Johsch cooks: Super quick and healthy chicken soup - Step by Step (easy)

Hi Steemit! Sorry for these couple days off but we had carnival this weekend. That's over now and so it's time again to eat healthier food than sweets and beer! With the cold temperatures at present, a warm chicken soup is just the right choice: it warms and is very healthy. This one is also fast on the table. Here's the deal:

Ingredients for 4 servings

500 g chicken breast
2 carrots
1/2 celeriac
1 spring onion
200 g peas
150 g small pasta (e. g. conchiglioni)
1 litre chicken stock
1 tablespoon olive oil and parsley
1 teaspoon curcuma
1/2 teaspoon of nutmeg
salt, pepper

Preparation

  1. First of all, the vegetables must be crushed: Wash the carrots and celery and cut them into small pieces. Wash the spring onions and cut them into small rings. Wash and chop the parsley.
  2. Rinse the chicken under running water and dab dry with kitchen roll. Then cut into small cubes. Put some olive oil in a pan and heat. Fry the vegetables and spring onions in the oil. Pour the chicken stock over it and cook for 10 min.
  3. Add the chicken and pasta and cook for another 5 min. Add the peas and cook for another 5 min.
  4. Season to taste with the spices and serve hot, garnished with parsley.
