Hello dear Steemians...
I'm here again today to give you another Indonesian recipe.
This time it's not vegetarian foods since I want to give my baby some to eat too.
But you can always make it into vegetarian recipe by replacing minced meat with few more eggs.
This dish is called "perkedel", in Germany we have a similar one called "Frikadelle", but our Indonesian style of "Frikadelle" are made with less meat and mixed with potatoes, so the German version would taste a bit heavier.
Our Indonesian "perkedel" has more spices but suitable to use for snacking and one can take it while travelling without making too much mess but one can have enough supply of carbo and protein, and one can also add some chopped carrots in the batter too to make it a complete meal in one go. :-D
This recipe is the kind of "perkedel" that I recently made for my little family.
These are the ingredients needed for the dish:
- 500 g potatoes (the best one is roasted or deep fried because only this way we could completely drain the water content of the potatoes. But you can also microwave it or steam it but then you might need to add some wheat flour and let it sit few hours in the fridge so that the batter is thickened more and not too sticky when we form it later)
- 1 tsp blackpepper (and a pinch of ground nutmeg if you have some, but it's optional)
- 1 tsp salt
- 1 tsp sugar
- 4 cloves garlic
- 1 onion (medium-sized)
- 2 tbsp chopped celery
- 2 tbsp chopped spring onion
- 2 tbsp crushed fried onions (optional, but it would taste better to add some in the batter)
- 150 to 200 g of minced beef
- 2 eggs (separate the egg yolk from the white part!)
Cooking instruction:
- Smash the roast/fried/steamed potatoes, set aside in a bowl.
- Grind the spices using a mortar (onion, pepper, garlic, salt and sugar) then stir fry for a while using a bit of cooking oil until it's getting fragrant.
- Add the minced beef into the wok and continue to stir-fry until it's evenly cooked.
- Add the mashed potatoes to the batter in the wok and stir it well until it's evenly mixed. If you use steamed potatoes, you better stir fry it rather long so that the water content could be drain up further.
- Turn off the fire then add the egg yolks, chopped celery, spring onions and fried onions. Mix it well.
- Make some mini burger with the batter then dip it in the egg white and deep fry it for a few minutes.
The egg white coating is necessary to prevent the mini burger (perkedel) from falling apart during the frying process.
However, if you dislike eating something deep fried, then you can also grill it in the oven. If you decide to grill it, then you don't really need the egg white coating.
Our "perkedel kentang daging" is ready to serve:
Since I have a rice cooker, so I can steam the jasmin rice while preparing the "perkedel".
To save time neverthles still able to make our meal healthier, I add some chopped veggies to the rice in the electric cooker and sometimes I even use home made broth instead of pure water to cook the rice.
This way my little princess would get all the nutrition she needs without making too much effort.
I'm a lazy mama so I train my baby to eat everything that her parent also eat. :-D
I just need to take some portion for her first before adding more salt and chilis or another ingredients which are not fit for babies yet. Nowadays there are many options for organic soy sauce and there are also some brand of asian sauces which don't containt artificial substances.
Surely it costs more than the one with preservatives & co. but it doesn't matter since I can let my baby eat my asian cuisines with more ease.
So this is the little portion for little Kobold. I'm glad that she likes it.

Eine gesunde, ausgewogene, nährstoffreiche und wie es aussieht, auch leckere Mahlzeit für die kleine Kobold!
Ich finde es gut, dass du keine "Extrawurst" für sie machst, sondern sie daran gewöhnst, mit euch mitzuessen. Nicht nur aus Bequemlichkeitsgründen, sondern auch damit sie bereits von klein auf ein abwechslungsreiches Nahrungsspektrum kennen lernt. Vorlieben und Abneigungen bilden sich dann ohnehin von selbst aus.
Den Reiskocher finde ich äußerst praktisch. Ich gebe zum Reis oder anderem Getreide auch manchmal gehacktes Gemüse dazu. Mit Gewürzen abgeschmeckt hat man damit ohne großen Aufwand eine bekömmliche Beilage.

Man kann übrigens viele Sachen mit einem Reiskocher kochen, auch mit dem einfachen Reiskocher und kein Multikocher.

Oh, das erste mal sehe ich Gemüse im Topf zusammen kochen, sieht aus als wenn ich vom Hinterland komme :-)) Sehr lecker liebe @kobold-djawa , mich interessiert es wie man den Namen ausspricht. Das ist übrigens eine gute Idee. Ich muss aber erstmal recherchieren, wie man Audiodatei hier anhängen kann. Das wird gesprochen wie es auch geschrieben ist. Die Zwei erste "e" wird ausgesprochen wie das "e" im Wort "gute", und das dritte "e" wird ausgesprochen wie das "e" im Wort "wenn".
Mit dem Gemüse im Topf... na ja, es ist der Trick einer faulen Mama hahaha.

Ich finde es super, dass du für dich und deine Familie frisch kochst! Das ist leider heutzutage nicht mehr selbstverständlich in dieser schnelllebigen Zeit! Obwohl es so wichtig ist für eine gesundes und ausgewogenes Leben.

Wir sind auch keine Vegetarier aus Ideologie. Wir versuchen mehr vegetarische Gerichte eher aus gesundheitlichen Gründen, zu konsumieren.
Ich meine, wir essen noch gerne Fleisch, aber nicht in großen Mengen wie Schnitzel o.Ä. und auch versuchen nicht so oft zu machen.
Hier teile ich mehr vegetarische Menu, denn ihre Rezepte sind am einfachsten unter den vielen Gerichten aus Indonesien. Außerdem, ich möchte den Vegetariern noch mehr Optionen vorstellen, statt nur Salat oder vegetarische Brotaufstriche zu essen.

Ich finde es übrigens super, wenn die Kids einfach mitessen. Sobald sie feste Nahrung essen können, sollten sie meiner Meinung nach mehrheitlich dasselbe essen, wie die Familie.

Saya suka sekali perkedel kentang, tapi malas bikinnya maunya tinggal makan, jadi ngiler lihatnya.
Di Indonesia sekarang ada produk baru perkedel instant tetapi saya belum pernah beli, belum ada di minimarket dekat rumah soalnya. Saya yakin pasti lebih enak perkedel kentang buatan mbak @kobold-djawa karena pakai daging.

Kentangnya buyar mungkin krn masih mengandung terlalu banyak air. Atau jenis kentangnya yang lunak.
Disini kalau beli kentang ada pilihan yang "festkochend" (cukup keras untuk dibuat masakan padat) atau yang jenis lunak: yg cuma cocok utk buat Puree, mashed potato atau semacamnya.
Supaya ngga gampang hancur juga jangan keseringan dibalik-balik.

Tingkat perkedel berbahan utama kentang saja, telah sangat nikmat menjadi lauk nasi, apalagi dicampur daging sapi, tentu kegurihannya akan terasa pada setiap gigitan...

Di rebus akan airnya bukannya berkurang malah makin banyak, jadi terlalu lembek adonannya, gampang ancur. Minimal dikukus lah. Tapi palign bagus sih digoreng atau di panggang. Selain itu pilihan kentang jg jangan sampai salah.
Ada 3 macem kentang, yang keras dan sangat keras yang cocok untuk dijadikan masakan padat... Dan ada yang lunak yg cuma cocok utk buat mashed potato atau puree kentang, atau kue lumpur misalnya.
Yg untuk perkedel atau kroket misalnya, mesti pakai yang jenis keras, jangan pake kentang utk puree.
