Puff

Ingredients

four small pears
three cups water
one cup red wine
two cups sugar
one cup honey
one lemon, halved
three cinnamon sticks
four cloves
one vanilla bean
one package puff pastry, thawed
six ounces semisweet chocolate, sliced
one egg, whipped
half cup caramel sauce

Instructions:

In a large sized pan, put the water, wine, sugar, honey, lemon, cinnamon sticks, cloves and vanilla bean. Put the pears in the poaching liquid and cook till just before tenderness, about fifteen to eighteen minutes. Allow pears to cool completely in the liquid.

Roll out puff pastry, and slice four three-inch circles in the dough. Slice all remaining dough lengthwise into strips.

Brush pastries with egg wash. Bake for twenty to twenty-five minutes, or till golden brown.

Drizzle with caramel sauce, and serve hot for a molten chocolate center.
