Simple recipe: Sweet Chestnut Cream
Here is a simple recipe that I tried on holiday in France after collecting chestnuts.
First of all: Sweet Chestnuts don t stay fresh for a long time. They should be processed as soon as possible after harvesting (before germination).
Ingredients for about four glasses of chestnut cream:
- 1500 g fresh chestnuts
- sugar
- Water
Step 1
cut the chestnuts shells with a knife crosswise.
Step 2
Boil the chestnuts in water for about 20 minutes.
Step 3
While its still warm, remove the white core from the shell. and put it aside in a saucepan.
Step 4
Now boil the same weight of sugar as the chestnut kernels with about a glass of water to a syrup. (approx. 1kg chestnut kernels after peeling = 1kg sugar )
Step 5
Pour the syrup over the chestnuts and let it boil again for 10-15 minutes. Mash the chestnuts with a fork until a creamy paste is formed.
Step 6
Fill in clean & dry jars
