Weekend Recipes #1 / Milkfish, High Pressure Cooked – Bandeng Presto

Hi Steemians...

Today is October 7th, 2017, the first weekend in October. This weekend recipe is milkfish cooked in high pressure pot. Milkfish is actually very tasty, but most people do not like it because this fish has a lot of bones. My kids also do not like milkfish for that reason. So I cooked milkfish in a pressed pot or commonly called [presto pan]. Cooking milkfish in this pot for approximately 35-45 minutes can soften the bones of milkfish so it is safe for consumption especially by children.



Ingredients :

1 kg (3) milkfish
7 grains of shallot
5 grains of garlic
1 cm ginger
3 cm turmeric
1 teaspoon of coriander
2 stems of lemongrass
1/2 lime or lemon
3 bay leaves
2 eggs
Soy sauce
4 grains of shallot chopped
Cayenne pepper
Salt
Banana leaf
Water
The oil for frying

Steps :
• Clean the milkfish, discard its stomach content, cut into two parts, give salt and lime juice



• Blend shallots, garlics, ginger, turmeric and coriander



• Alloy Pans with banana leaves



• Mix fish with fine spices



• Enter the fish, set neatly, if not fit make it two layers
• Enter the lemongrass and bay leaf
• Add water until the fish is almost submerged
• Cover the pan, cook for 30-45 minutes
• After cooking turn off the heat, wait until the steam runs out and the pan is cold
• Remove the fish, beat the egg with a spoon, put the fish into the egg and fry
• Make a soy sauce by mixing soy sauce, shallots and chillies
• Serve fried fish with soy sauce and warm rice.

Hari ini 7 Oktober 2017, akhir pekan pertama di bulan Oktober 2017. Resep akhir pekan kali ini adalah bandeng presto. Ikan bandeng sebenarnya sangat enak, tapi kebanyakan orang kurang suka karena ikan ini memiliki banyak tulang. Anak-anak saya juga tidak menyukai ikan bandeng karena alasan itu. Maka saya mensiasatinya dengan cara memasak memasak ikan bandeng di panci bertekanan atau biasa di sebut panci presto. Memasak ikan bandeng dalam panci ini selama kurang lebih 30-45 menit dapat melunakkan tulang-tulang ikan bandeng sehingga aman dikonsumsi terutama oleh anak-anak.

Bahan-bahan :
1 kg (3 ekor) ikan bandeng
7 butir bawang merah
5 butir bawang putih
1 cm jahe
3 cm kunyit
1 sendok teh ketumbar
2 batang serei
1/2 buah jeruk nipis
3 lembar daun salam
2 butir telur
Kecap
4 butir Bawang merah dirajang
Cabe rawit
Garam
Daun pisang
Air
Minyak untuk menggoreng

Cara Membuatnya :

  1. Bersihkan ikan bandeng, potong menjadi dua bagian, beri garam dan perasan jeruk nipis
  2. Haluskan bawang merah, bawang putih, jahe, kunyit dan ketumbar
  3. Lumuri ikan dengan bumbu halus
  4. Alasi Panci dengan daun pisang
  5. Masukkan ikan, atur dengan rapi, jika tidak muat buat dua lapisan
  6. Masukkan sereh dan daun salam
  7. Tambahkan air hingga ikannya hampir terendam
  8. Tutup panci, masak selama 45menit sampai 1 jam
  9. Setelah masak matikan api, tunggu hingga uap habis dan panci dingin
  10. Keluarkan ikan, kocok telur dengan sendok, masukkan ikan ke dalam telur dan goreng
  11. Buat sambal kecap dengan mencampurkan kecap, bawang dan cabe yang telah dirajang
  12. Hidangkan ikan bandeng presto goreng dengan sambal kecap dan nasi hangat.

masakan kesukaan saya. makan bandeng paling ribet krn byk duri, kalo dipresto, bisa balas dendam, kita kunyah2 itu duri hahaha
kalo di semarang, bandeng presto jadi oleh2 khas. bentuknya utuh, hmm....menggoda banget.

Hahaha, iya Mbak.. bisa balas dendam, pengennya juga bikin yg utuh.. tapi apa daya, panci prestonya ukuran kecil, mesti dipotong dua baru muat
