Weekend Recipes #4 / Egg With Coconut Milk – Telur Masak Santan

Hi Steemians...

Today is November 19th, 2017, the third weekend in November. This weekend recipe is egg cooked with coconut milk. This is my favorite cuisine since childhood.



Like Aceh cuisine in general, this dish also uses asam sunti, the Averrhoa bilimbi which is dried and salted. If steemian friends do not have asam sunti then it can be replaced with tomatoes. For this recipe I prefer to use duck eggs. The recipe is as follows:

Ingredients :

6 eggs
3 cloves of shallots
1 clove of garlic
6 pieces cayenne pepper
2 pieces of red chili
2 cm turmeric
1 cm ginger
7 grains of asam sunti or 1 tomato
1 tsp coriander
1 stem of lemongrass
700 ml of coconut milk
1 clove of shallot, sliced
3 pieces of green chili cut into two lengths
Salt

Steps :

Prepare all ingredients







Blend shallots, garlics, ginger, turmeric, cayenne, red chili, asam sunti and coriander in food processor to smooth pasta, if asam sunti replaced by tomatoes, do not blend it, just slice



Prepare the pan, add spices, sliced shallots, green chilli and lemongrass



Add the coconut milk and salt, cook until boiled while stirring



Add the eggs one by one



Cook until the yolks harden



Ready to serve

Hari ini 19 November 2017, akhir pekan ketiga di bulan November 2017. Resep akhir pekan kali ini adalah telur dimasak dengan santan. Ini adalah masakan kesukaan saya sejak kecil. Seperti masakan Aceh pada umumnya, masakan ini juga menggunakan asam sunti yaitu belimbing sayur atau belimbing wuluh (Averrhoa bilimbi) yang dikeringkan dan diberi garam, jika teman-teman steemian tidak punya asam sunti maka bisa digantikan dengan tomat. Untuk resep ini saya lebih suka menggunakan telur bebek. Resepnya adalah sebagai berikut :

Bahan-bahan :

6 butir telur
3 siung bawang merah
1 siung bawang putih
6 buah cabe rawit
2 buah cabe merah
2 cm kunyit
1cm jahe
7 butir asam sunti atau 1 buah tomat
1 sdt ketumbar
1 batang serei
700 ml santan
1 siung bawang merah dirajang
3 buah cabe hijau dibelah jadi dua
Garam secukupnya

Cara Membuatnya :

  1. Siapkan semua bahan
  2. Haluskan bawang merah, bawang putih, jahe, kunyit, cabe rawit, cabe merah, asam sunti dan ketumbar. Jika asam sunti diganti dengan tomat, tidak perlu dihaluskan, tetapi dipotong-potong saja.
  3. Siapkan wajan, masukkan bumbu halus, bawang merah yang telah dirajang, cabe hijau dan serei
  4. Masukkan santan dan garam
  5. Masak hingga mendidih sambil diaduk
  6. Masukkan telur satu persatu
  7. Masak hingga kuning telur mengeras
  8. Siap untuk dihidangkan
