Wine Fruit cake

During my free time, I like to bake some cakes, cupcakes or cookies for my family members.

Baking is a good therapy for me to release stress in life. I am excited to wait and see for the result of my self-bake products.

I would like to share my Fruit cake recipe in my blog.

Wine Fruit Cake

1 cup dried mix fruits and chopped nuts
1/2 cup white wine
1/2 cup butter
1/4 cup brown sugar
1 egg
1/2 cup all purpose flour
1/8 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup molasses
2 tablespoons milk
2 teaspoon white Wine

Directions

Soak mix fruits in 1/2 cup white wine for 2 days at room temperature. May replace white wine by rum.
Preheat oven to 165 degrees C. Apply aluminium foil or baking paper on a round pan or loaf pan and spray butter.
Beat butter and brown sugar until fluffy. Add in egg. Whisk together flour, baking soda, salt, and cinnamon, mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Put all into the pan.
Bake for 40 to 45 minutes.
Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons wine.
