One from my great-grandmother's stash of recipes. According to her book a lot of kids she knew including my great-aunt were a bit fussy and didn't always want to drink when they really needed to like when they were sick. This was before the era of Gatorade and Pedialyte type drinks with electrolytes designed to help when you've been puking or having it out the other end, so according to her notes she primarily used this for orange juice but really most kinds of juices will do. The best part? It's super, super easy!
You'll need the following;
- 4 cups of liquid
- 1 box of unflavored gelatin (should contain about 4 packets)
And that's pretty much it! The brand here in the US is called Knox unflavored gelatin. This is better than jell-o because it doesn't have as many calories or as much sugar, plus you can make it in whatever flavors you want. But please do your research, some juices (I know kiwi, pineapple, and guava off the top of my head) basically have enzymes that don't do well with gelatin. But you can honestly even do this with coffee and tea!
Start by taking 3 of your 4 cups of liquid and putting it in a pot on the stove. Heat until it's just boiling, like little bubbles are starting to form and all that.
Then go ahead and add all 4 packs of your gelatin that come in the box. Turn the heat down to medium and set a timer for 5 minutes. I found it's best to take a whisk at this point to help break up the gelatin clumps and get them nice and dissolved in your liquid.
Once the timer is up turn off the heat and add in your last cup of liquid. Then pour the mix into a pan, set it in the fridge and let it set.
A lot of recent recipes I found for this suggest using silicone molds, but with both regular jell-o and this kind of mix I've found they don't come out nice if you do that, some part of it always sticks to the mold and it's just bad no matter what I've tried - chilling then allowing to return to room temp, heating a little bit, stuff that's supposed to help it not stick to the molds, you name it and nothing works. Best to just do it in a regular baking pan and cut it into cubes when it's done :)
