Hard-boiled eggs with cheese and tomato sauce   

1. Proceed as for above post using béchamel in place of Mornay sauce. 

2. Add a little tomato sauce or tomato puree to the béchamel to give it a pinkish colour. 

3. Mask the eggs, sprinkle with grated cheese.

4. Gratinate under the salamander.
