Butter Chicken – The king of all Punjabi dishes!

Butter chicken is one of the most famous dishes from Punjabi cuisine. Grilled chicken tossed in a creamy gravy with plenty of butter is served with naan or rumali roti. Just as the name suggests, a lot of butter is used in the preparation of the dish.

Butter Chicken Recipe
Step 1
Mix ½ teaspoon red chili powder, a teaspoon of lemon juice and ¼ teaspoon salt with 500 gms of boneless chicken and set it aside for half an hour.
Step 2
Mix one teaspoon of ginger & garlic paste, ½ teaspoon of garam masala powder and two teaspoons of mustard oil in yogurt and marinade the chicken with it. Place it in the refrigerator for 2-3 hours.
Step 3
Grill the marinated chicken in a moderately hot tandoor for 10-12 minutes or cook in a pre-heated oven till it is almost done.
Step 4
Add two tablespoons of butter to chicken and cook for another two minutes.
Step 5
Heat butter in a pan for making gravy. Add 2-3 cloves, 2 green cardamoms, 2-3 peppercorns & ½ inch cinnamon.Saute for 1-2 minutes and then add 1 teaspoon of ginger & garlic pastes. Saute for 2-3 minutes and add half cup of tomato puree, salt according to taste & ¼ teaspoon of red chilli powder. Saute till the puree is cooked and then add half cup of water.
Step 6
When the mixture comes to a boil, reduce the heat and let it simmer for a few minutes. Add a teaspoon of sugar and a teaspoon of kasoori methi.
Step 7
Add the grilled chicken pieces and let it simmer for a few minutes. Add half a cup of fresh cream.
Step 8
Serve it hot with naan or rumali roti.
