Blueberry Pancake
Recipe Servings: 6
Ingredients
one cup soy milk
half cup water
one cup whole wheat flour
half cup stone ground cornmeal
one teaspoon baking powder
half teaspoon baking soda
quarter teaspoon salt
one cup fresh blueberries
two tablespoons vegetable oil
PROCEDURE
Preparation Time: 10 minutes
Cooking Period: 15 minutes
Ready In: 25 minutes
In a small sized dish stir the soy milk and water.
In a large sized dish, mix the flour, cornmeal, baking powder, baking soda and salt. Blend in the soy milk mixture just till blended. Flip in the blueberries and let the batter sit for five minutes.
Lightly oil a pan or griddle and heat over medium heat. Fill about quarter cup of batter onto the hot griddle and cook till pancakes are bubbly on top and edges are slightly dry looking. Turn and cook till pancakes are browned. Move to a baking sheet and keep warm in the oven while cooking the remaining batter. Serve hot with syrup or jam.

Love your write up, simple and direct..... The addition of blueberries in the production of this food makes it very healthy. Blueberries is made up of nutrients especially antioxidants and phytochemicals. I personally love the aroma of blueberries....Great Job!!!
