Rice Carrot
Ingredients
one cup basmati rice
two cups water
quarter cup roasted peanuts
one tablespoon margarine
one onion, sliced
one teaspoon minced fresh ginger root
three fourth cup grated carrots
salt to taste
cayenne pepper to taste
chopped fresh cilantro
INSTRUCTIONS
Preparation Time: 15 minutes
Cooking Period: 20 minutes
Ready In: 30 minutes
Mix rice and water in a medium pan. Bring to a boil over high flame. Reduce heat to low, cover with lid, and allow to steam till tender, about twenty minutes.
While rice is cooking, grind peanuts in a blender and set aside. Heat the margarine in a skillet over medium flame. Mix in the onion; cook and mix till the onion has softened and turned golden brown about ten minutes. Mix in ginger, carrots, and salt to taste. Reduce fire to low and cover to steam five minutes. Mix in cayenne pepper and peanuts. When rice is done, place it to skillet and mix gently to combine with other ingredients. Top with chopped cilantro.
