Power Cookies

Ingredients

four cups rolled oats
one can cannellini beans
half cup white sugar
half cup brown sugar
one teaspoon vanilla extract
one teaspoon baking powder
one teaspoon baking soda
one teaspoon ground cinnamon
half cup sliced pitted dates
half cup flaked coconut
half cup raisins
half cup sliced walnuts

INSTRUCTIONS

In a medium sized bowl, smash beans to a smooth paste. Mix in the white sugar, brown sugar and vanilla till well mixed. Stir the ground oats, baking powder, baking soda and cinnamon; mix into the bean mixture. Mix in the dates, coconut, raisins and walnuts. Drop dough by heaping spoonfuls onto the prepared cookie sheet.

Bake for ten - fifteen minutes in the preheated oven, till golden. Cool on baking sheets for five minutes then eliminate to wire racks to cool completely.
