Peanut Soup
Ingredients
two tablespoons olive oil
two medium onions, chopped
two large red bell peppers, chopped
four cloves garlic, minced
one (28 ounce) can crushed tomatoes, with liquid
eight cups vegetable broth or stock
quarter teaspoon pepper
quarter teaspoon chili powder
two thirds cup extra crunchy peanut butter
half cup uncooked brown rice
INSTRUCTIONS
Heat oil in a large stock pot over medium high heat. Cook onions and bell peppers until lightly browned and tender, mixing in garlic when almost done to prevent burning. Stir in tomatoes, vegetable stock, pepper, and chili powder. Reduce fire to low and simmer, uncovered, for thirty minutes.
Mix in rice, cover, and simmer another fifteen minutes or till rice is tender. Combine in peanut butter till well blended, and serve.
