Healthy Spicy Potato Curry

Recipe Servings: 6
Preparation Period: 30 Minutes
Cooking Period: 30 Minutes
Total Cooking Period: 1 Hour

Ingredients
four potatoes, peeled and cubed
two tablespoons vegetable oil
one yellow onion, diced
three cloves garlic, minced
two teaspoons ground cumin
one and half teaspoons cayenne pepper
four teaspoons curry powder
four teaspoons garam masala
one (one inch) piece fresh ginger root, peeled and minced
two teaspoons salt
one (fifteen ounce) can diced tomatoes
one (fifteen ounce) can garbanzo, rinsed and drained
one (fifteen ounce) can peas, drained
one (fourteen ounce) can coconut milk

Instructions:

Put potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then lessen the heat to medium-low, wrap, and simmer till just tender, about fifteen minutes. Drain and allow to steam dry for a 1 or 2 minutes.

Meanwhile, heaten up the vegetable oil in a large pan over medium heat. Mix in the onion and garlic; cook and blen till the onion has softened and turned translucent, about five minutes. Season with cumin, cayenne pepper, curry powder, garam masala, ginger, and salt; cook for two minutes more. Put the tomatoes, garbanzo beans, peas, and potatoes. Fill in the coconut milk, and bring to a simmer. Blend five to ten minutes before offering.
