Vicky's Bean Soup
Recipe Servings: 6
Ingredients
one tablespoon olive oil
one large onion, sliced
one stalk celery, sliced
two carrots, sliced
four cloves garlic, sliced
two tablespoons chili powder
one tablespoon ground cumin
one pinch black pepper
four cups vegetable broth
four (fifteen ounce) cans black beans
one (fifteen ounce) can whole kernel corn
one (fifteen ounce) can crushed tomatoes
Instructions:
Heaten up the oil in a large bowl over medium-high heat. Saute onion, celery, carrots and garlic for five minutes. Season with chili powder, cumin, and black pepper; cook for one minute. Mix in vegetable broth, two cans of beans, and corn. Bring to a boil.
At the same time, in a food processor or blender, process remaining two cans beans and tomatoes till smooth. Mix into boiling soup mixture, reduce heat to medium, and simmer for fifteen minutes.

i tried a couple dish that made from vegan...it is not bad at all.
