Vegan Rosemary Mashed Potatoes Recipe

Rosemary Mashed Potatoes

These mashed potatoes are so rich, creamy, and flavorful. Always a favorite in my household!

Ingredients

6 russet potatoes (white potatoes will also work)

1/3 cup vegetable broth

1/4 cup vegan butter

1 tsp of rosemary

1 tsp of garlic pepper

Parsley

*Note on serving size: My mom always told me, and her grandmother told her, that a perfect serving is one potato per person and an extra for the pot. So if you're feeding 4 people and you don't want any leftovers, you would need 5 potatoes.

Peel, wash, and cut the potatoes into small chunks. Place them in a large pot with plenty of water, and boil on high heat for about 45 minutes. You want the potatoes to be nice and soft.

Once they are soft, drain the potatoes and add the butter and vegetable broth. Use a hand mixer (or a potato masher) until you achieve a creamy consistency. Mix in the garlic pepper and rosemary, garnish with parsley, and enjoy!
