Here's a simple, yet delicious, recipe for a very refreshing and quenching Iced Tea for those hot and humid summer days. It only requires green tea, limes and fresh mint leaves as main ingredients. Feel free to use Stevia as a sweetener for a low calorie alternative. The results are equally great.
Ingredients:
- 10 green tea bags (any brand will do)
- 2 L of fresh water (roughly 8 cups)
- 2 cups of loosely packed mint leaves (about 2/3 cup chopped)
- 1/2 cup of granulated sugar (you can use 1/4 cup Stevia powder for low calorie alternative)
- 1/2 cup of fresh lime juice
Instructions:
- Pour water in a pot and over high heat bring it to a simmer. Remove from heat, add the tea bags and mint, cover, and set aside for 10 minutes.
- Once the tea is fully steeped, discard the tea bags, add the sugar, and stir until the sugar has completely dissolved. Let cool to room temperature, then place in the refrigerator to cool completely.
- Once the tea is cold, remove the mint (I use a strainer) in a pitcher and stir in the lime juice. Taste and adjust with more lime juice or sugar as desired.
- Serve over ice cubes and mint leaves if desired.
