Breakfast Quiche Recipe

This is a great breakfast quiche recipe that is quick to prepare on a busy morning. You can also prepare somewhat the night before by cutting up the ham, shredding the cheese, and cutting up the vegetables (if you add them in) and keeping them in the fridge in sealed containers. In the morning, you can just throw it all together in a matter of seconds!

Additionally, this versatile breakfast quiche is great with or without a crust!

Mushroom and leek quiche

Easy and Tasty Breakfast Quiche

  • READY IN 1 Hr 

Serves: 8

  •  2 cups milk
  •  4 eggs
  •  3/4 cup biscuit baking mix
  •  1/4 cup butter, softened
  •  1 cup grated Parmesan cheese
  •  1 (10 ounce) package chopped frozen broccoli, thawed and drained
  •  1 cup cubed cooked ham
  •  8 ounces shredded Cheddar cheese


  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.
  2. In a large bowl, beat together milk, eggs, baking mix, butter and Parmesan cheese. Batter will probably be lumpy. Stir in broccoli, ham, and Cheddar cheese. Pour into prepared quiche dish.
  3. Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.


Note: You can replace the broccoli with peppers, spinach, or any other vegetable combination that you choose. 

Note: You can replace the cheddar cheese with any flavor cheese you desire.

Note: This quiche is great fresh out of the oven, but it can also be enjoyed cold out of the fridge as leftovers the next day. To reheat, simply put it in a microwave safe container and nuke it for a couple of minutes until it is hot. You can also reheat it in the oven - just wrap a piece in foil and warm it up until the desired temperature is reached. 

Note: To have an extra breakfast quiche on hand, you can cook one in advance, let it cool completely, and then freeze. To reheat, you don't have to let it thaw beforehand. Just give it some extra cooking time.
