Asian noodles with coconut milk(fun.taste.ic food #5)

Everyone knows these noodles from Asian instant soups. Today let's try a more fresh variant of this type of food.

Ingredients  (for 4 servings): 

  • 250g instant mie noodles
  • 1 bunch spring onions
  • 1 large carrot
  • 2 large champignons
  • 2 stalks celery
  • Rapeseed oil
  • 4 tbsp soy sauce (more if you like)
  • 100ml coconut milk
  • Sambal oelek (as much as you want)
  • 1 pinch of red curry paste .
  • Vegetable stock powder
  • Salt


Preparation:

Prepare noodles according to package instructions. 

Meanwhile, cut spring onions and carrots into thin strips and put them aside for now. 

Cut mushrooms and celery(both very small) and add them to other the vegetables. 

Heat oil in a large pan(preferably wok) and add the vegetables and the noddles.

Let it cook for a few minutens.

Add the coconut milk and let it cook for a few minutes.

Add soy sauce , sambal oelek and curry paste.

Season it with vegetable broth powder and salt.
