Even if it's a vegetarian variant of this food you could also add meat if you want.

Ingredients:

  • 200g broccoli
  • 200g cauliflower
  • 200g carrots
  • 2 onions
  • 2 cloves of garlic
  • 400ml coconut milk
  • 2 tsp soy sauce
  • Curry powder
  • Salt
  • Pepper
  • Chili (fresh or powder)
  • Sambal Oelek


Preparation:

Cut the vegetables into bite-sized pieces. 

Chop onions and garlic.

Cook the carrots for about 4 minutes. Then add broccoli and cauliflower and cook again for about 4 minutes.

Fry onions and garlic glassy in a large pan or wok.

Add the vegetables and continue frying until the vegetables are slightly browned .

Add soy sauce and mix well. 

Add salt, pepper, and chili. Season it with curry powder. Fry briefly , then deglaze with the coconut milk.

Let boil down the coconut milk. 

Season it again with the spices and sambal oelek if necessary.

Serve the curry with rice.
