You can omit roasted pine nuts if you don't like them because they have a really intense taste.
Ingredients:
- 90g pasta (here: Wholemeal tagliatelle)
- Rapeseed oil
- 1 clove garlic
- 1/2 onion
- 1 chilli fresh or dried, sambal oelek or something other spicy.
- 200g canned diced tomato
- 1 handful of fresh spinach
- 1 tsp vegetable stock powder
- Oregano
- Salt
- Pepper
- Basil
- 1 tbsp roasted pine nuts
- Parmesan cheese, freshly grated
Preparation:
Prepare pasta according to package directions.
Heat some oil in a pan. Add finely chopped garlic and onions and braise them lightly.
Add tomatoes.
Season it with the spices and stir in the washed spinach.
Let it simmer for a few minutes.
Meanwhile, heat a small frying pan and roast the pine nuts without(!) adding oil.
Serve it and sprinkle it with roasted pine nuts and some parmesan.
