Spaghetti in rucola and white wine sauce(fun.taste.ic food #8)

Here's a recipe if it has to be fast again but should taste anyway. The salad is optional.

Ingredients (for 4 servings):

  • 300g Spaghetti
  • Rapeseed oil
  • 1/2 onion
  • 2 cloves of garlic
  • A handful of rucola
  • Dry white wine
  • 1 cup of cream
  • 20g freshly grated Parmesan cheese
  • Some basil leaves
  • Vegetable stock powder
  • Oregano
  • Salt
  • Pepper


Preparation:

Bring water to a boil in a large cooking pot. Add salt and spaghetti. 

Heat a little bit of oil in a large frying pan. 

Chop onion and garlic finely and add to the pan. 

Meanwhile, wash the rucola and pat it dry.

Chop rucola coarsely and also add to the pan (if you like a more intense flavor of the rucola, the rucola should be added at the very end). 

Deglaze with a generous splash of white wine and simmer briefly.

Add a little cream and season it with vegetable stock powder, salt, pepper and oregano. 

Once the cream is reduced in the pan, add another sip of cream. Proceed with this step until the full cup of cream is used up.

Season it if necessary. 

Chop basil and add it together with the grated Parmesan to the sauce. 

Drain the pasta and serve with the sauce.
