Although it was not my intention, this recipe is even for people who like to eat Low-Carp food. But don't be afraid, it's still tasty. :-)
Ingredients:
- 1 zucchini (medium to large)
- Rapeseed oil
- 1/2 onion
- 1 sip of beer or mineral water
- 2 tomatoes
- 1 small can of tomato paste
- 1 tsp cream cheese
- Fresh basil leaves
- 1 clove of garlic
- Oregano
- Vegetable stock powder
- Salt
- Pepper
- Grated Parmesan if you like
Preparation:
Cut the zucchini with a peeler into thin slices. Now cut the slices with a knife into strips so that they have the size of spaghetti or narrow ribbon noodles.
Heat oil in a large pan. Chop onions and garlic. Now braise onions, garlic and the zucchini noodlesl lightly in the pan.
Add beer(or water). This makes the zucchini softer, so it can better be wrapped with a fork.
Dice the tomatoes and also add them to the pan.
Add tomato paste and cream cheese.
Finally season it with vegetable broth, salt, pepper, oregano and fresh chopped basil.
Sprinkle with Parmesan -done!
