Chicken Madras curry rice pilaf with dried apricots.

You will need this and follow instructions. I used broth instead of water and added extra madras to the seasoning packet for the rice mixture.

Organic chicken thighs seasoned with madras, cayenne and black pepper in a saute pan with onions and carrots using avocado oil.

when chicken is done take it out and put it to the side to cool , then chop for later and leave the veggie mixture in the pan.

Get the organic peas and diced dried apricots ready.

When onions/carrots are done add a little broth, dried chilis, cayenne, peas, cut chicken and apricots and let get happy until all the liquid is gone.

To serve put rice on a plate and chicken mixture around it :)

I've never heard of Apricots in curry but that looks damn delicious...
