Harvest Traditions - Steeming Hot Ghost Pepper Tomato Salsa!

Every year during harvest time there is an abundance of food which needs to be stored for the cold winter ahead. What better to warm you up than some tomato salsa fresh from your garden.

If stored properly canned food (in glass) can be saved for up to 15 or 20 years making it an excellent source of long term vitamins. However you should not do as these folks in this picture did, keeping glass jars on high shelves with no railings to hold them in. A small earthquake would wipe out their entire food stash. I highly suggest you all keep your glass jars protected in a box on the floor and newspaper between the jars for when the Big One decides to hit. You wouldn't want all that hard work and preparation to go to waste at a time when you need it most, would you?

Now we know how to protect our jars from Earthquakes, so let's begin!

Here is the recipe.
2 large carrots
9 onions
1 pound Jalapeno pepper
6 green peppers
1 3/4 pounds yellow peppers
1 pound chili peppers
8 ghost peppers

Blend all of those things together in food processor.

Chop 16-20 tomatoes
a few garlic cloves
2 cups apple cider vinegar
4-6 tablespoons of salt
3 cans tomato paste
a few tablespoons of honey is optional for added sweetness
1 tablespoon oregano
3 tablespoons paprika
1 tablespoon cumin

Boil until soft, approximately 1 and a half hours.

Here you can witness how steeming hot the salsa actually is.
