I was truly inspired by this Thai dish. The broth looks a lot but the recipe I used called for 1 cup. I also added only 5 chilies instead of 8. I think the spicy ness would have killed me lol
Also I made my own steamer using my wok and pizza pan then covered it with larger lid...I had to improvise 😁

Recipe:
1 fresh, scaled and cleaned sea bass
5-6 Thai chilies red/green
3 cloves garlic minced
1 shallot minced
5 tablespoons fish sauce
2 tablespoons palm sugar or brown sugar
1/4 cup lime juice
Handful cilantro /Thai basil minced
1 cup chicken stock
Stuff inside fish: 1 stock lemongrass and ginger slices
Score sea bass and steam or bake in oven for 15-20 min. Once fish is cooked set aside and prepare sauce.
In a saucepan bring the chicken stock and sugar to a boil. Once sugar is completely dissolved remove from stove and place in a bowl. Then add minced chilies, shallot, garlic, cilantro and Thai basil. Stir. Then add fish sauce and lime juice. Broth should still be hot. Pour ontop of fish and garnish with more Thai basil. That’s it!
