It's a common misconception that the convenience store 7-Eleven is named after the stores opening hours.
The store is actually named after its co-creators Thomas Albert Seven and Walter Cuthbert Eleven the third. Mr.Seven opened his store 'Seven's Store' in Idaho in 1883. The store struggled for several years until diamond miner and multi-millionaire Mr.Eleven stepped in and invested in Seven's Store.
Investor Mr.Elevens insisted his name be included in the business and thus 7-Eleven was born.
haha I dont know if this is meant as a parody or not.
Wikipedia seems to disagree with your theory, but it was a good read regardless.
