“Smashburger” and Homemade Big Mac Sauce!

Hello friends! — and all you other burger eatin’ mofoz and mofettes out there. Let’s eat it!

Behold, the “smashburger” i made for Leon and myself a few minutes ago (we each ate 1/2 a patty). A simple affair really, but i have learned a couple things about frying burgers and making sauce that i wanna’ share. I mean, holy fuck! What a burger! The only thing wrong with it was it was too small 😜

So here’s a few secrets i have learned recently.

  1. Big Mac (or, “burger” sauce)

2 parts mayo
1 part ketchup
1/2 part dijon
1/2 part yellow mustard
Dice a small pickle and squirt in some Franks Hot Sauce, and Voliá!

-2. Buns

Today i used some small “buttertop” buns — they’re white bread and super squishy soft. I lightly buttered the inside of them and slow grilled them while i was making the patty.

-3. The Patty

I just used regular, lean ground beef, although ground chuck or a better cut like 510’s ground Hanger steak would work even better! Here’s the deal: get a cast iron pan good and hot on the stove (med-hi heat, till it’s hot), pull out a burger’s worth of ground and without handling it too much make a big meatball. The reason for this is that you wanna’ keep some air pockets in between the strands of meat so that the fat and juices can flow, and the reason to “smash it” is to get good contact on pan as well as for shaping the burger (all the little “tags” are the tastiest bits!) But NEVER press down on a burger once it has started to cook. Okay, now salt and pepper the meatball and get ready. Pour in a table spoon of extra virgin olive oil and set in the meatball. Now, “smash” that badboy down to about 1/2-3/4 of an inch and LEAVE IT for about 3-4 mins, or until the brown starts creepin’ up the sides. Flip it, pinch more of good salt, and cheese it. After about 3-4 mins pull it off and let it rest for 5 mins and you will have a Crunchy, juicy, meaty, cheesy delicious beef puck.

-4. Assembly

Pull the toasty (grilled) buns off and slather both sides with burger sauce (i added raw onion to mine) and get ready for a delight!

Now sometime soon i am going to have to prepare a gourmet burger so i can challenge @silverd510’s masterpiece, but that is for another time... The burgers i made today were just simple by comparison, but holy cow! Does some new found technique really make a difference — the crunchy edges and the miracle of home-made Big Mac sauce has made me a very happy camper.

I Hope i have inspired a few appetites out there to go and “trow a burger down yer troat!”
