Yo recomiendo usar stouts o dependiendo en que parte estes y que cerveza consigas! aqui en venezuela una buena opcion es (cerveza solera negra) oscuros por su alto contenido en azúcar caramelizada. Una cerveza con más de 6.5% de alcohol. Tipo guiness.
En lo personal me gusta sofreir ajo, echalote, tomillo y pimienta. El stout y dejar que redusca el alcohol, agregar ya sea demi glace o fondo de res obscuro, reducir y montarle mantequilla.
