Spelt is an ancient cereal, rich in beneficial properties and fibers: the ideal food to get rid of toxins. Spelt contains antioxidants such as selenium and phytic acid, in addition to vitamins A, B2 and B3 and phosphorus (100 grams contain 420 mg, against 330 of wheat), which makes it an excellent cereal to give you energy more against fatigue. In addition, its nutrients are assimilated better and has a rather low glycemic index, which avoids to make the blood sugar rise, letting the sugars, dosed in the right quantities, reach the brain and do not turn into spare fat. Introduce spelt into your diet, as an alternative to other cereals.

Spelt, at the base of many healthy dishes

Spelt is cooked like other cereals, boiled in salt water. You can also prepare it to steam and bring it to the table as a first course or as a base for a rich summer salad, along with cooked vegetables, cherry tomatoes, mozzarella and served warm with a drop of extra virgin olive oil.
