This is how! I donโ€™t usually use a recipe, but I dictated my measurements when I made this for Easter. Here you go!

1 cup dry texturized pea protein
2 Tbsp pea protein powder
1 Tbsp methyl cellulose
1/2 tsp white pepper (or black pepper)
1/2 tsp sugar (optional)
1 Tbsp mushroom seasoning granules
1 Tbsp vegetarian oyster sauce
1 Tbsp vegan fish sauce
1/2 Tbsp golden mountain sauce
3/4 cup water
3 cloves minced garlic
1/3 cup grated taro
1/3 cup thinly sliced wood ear mushrooms (rehydrated)
1/2 cup rehydrated bean thread noodles (I cut mine into approx 1 inch pieces)
1/3 cup shredded carrot
1/3 cup minced/shredded cabbage
2 Tbsp minced white onion
2 thinly sliced green onions
1/4 tsp msg (optional)
Spring roll/lumpia wrappers (not egg roll!) - I used Menlo brand.

  1. Combine first 6 ingredients. Mix well.
  2. Using a 1 cup measuring cup, add the water, vegetarian oyster sauce, vegan fish sauce, and Golden Mountain sauce. Mix well before adding to the dry ingredients. Add to dry mixture and stir well to incorporate wet ingredients.
  3. Allow โ€œmeatโ€ to rest for 20-30 mins so it can properly rehydrate. Prepare vegetables and bean thread noodles.
  4. Add remaining ingredients to the mixture and combine until the veggies are evenly distributed. Note: I typically start with 1/3 of most of the vegetables, but I typically add more as I prefer more veggies in mine.
  5. Before wrapping the spring rolls, take about a tablespoon of filling and microwave it for about 30 seconds. Taste to ensure seasoning is good. If the mixture isnโ€™t salty enough, add a little more Golden Mountain seasoning at a time (no more than an additional 1/2 Tbsp).
  6. Begin wrapping spring rolls (Iโ€™d suggest watching a YouTube if youโ€™ve never made spring rolls before. Itโ€™s hard to explain the process. Lol)
  7. Once youโ€™re rolled most of your spring rolls, heat oil (I use canola) to 325ยฐ and fry until light golden brown.
