Peel and dice the potatoes, chop the red onion, and de-stem the beans. Put cold water and potatoes in a pot. Heat and cook over medium heat for about 15-20 minutes, or until potatoes are tender.

Heat a saucepan with cream, butter over low heat, season with salt and nutmeg and keep warm. Once the potatoes are cooked, drain them and use a potato masher to press the potatoes into a potato puree. Add the potatoes to the creamed butter mixture and mix.

Blanch the cannellini beans and cook in boiling water for about 5 minutes, then drain and rinse in cold water until the beans are cooled down. Roll a bundle of beans in bacon and repeat until all beans have been processed. Using a mortar and pestle, crush the black pepper grains and season the steak with salt and the crushed black pepper, rubbing both sides with the seasoning.

Using a mortar and pestle, crush the black pepper grains and season the steak with the salt and crushed black pepper, rubbing both sides with the seasoning. Add the bacon and bean rolls to the pan and heat over medium-high heat, stirring for about 5 minutes, or until the rolls are golden brown on both sides, then remove from heat. Add oil to the same pan, add the steak and sear for about 3 minutes on each side, then remove from heat. Add more vegetable oil to the pan and sauté the red onion, stirring for about 3 minutes.

Dissolve the lumps in the bottom of the pan with the cognac brandy, add the remaining cream and butter, and cook until smooth, about 8-10 minutes. Return the steak to the pan and cook briefly. Serve steak on a platter with mashed potatoes and bacon and bean rolls, spoon some sauce over the top before serving and enjoy!
