How to make Thai Iced Tea

On behalf of the #SteemianFoodNetwork I'm proud to present my summer recipe: Ice Ice Baby - Thai ice tea!


In my first ever post on steemit I wrote about a beautiful Thai island called Koh Chang. We stayed in a quaint bunglow at the Blue Lagoon, which also has a cooking school.

That's me on the right pretending I know what I'm doing :)

The cooking lesson was fantastic, and we were given a little cook book so we could try the recipes out at home. The cook book has wonderful recipes and oozes charm. The Thai ice tea recipe I'm sharing with you today is from that book.

Ingredients

  • 1/2 cup (120ml) Thai tea
  • 2/4 cup (140g) sugar
  • 3/4 cup (180ml) condensed milk
  • 1 cup (240ml) milk
  • crushed ice

Thai iced tea (ชาเย็น) is usually made from strongly brewed Ceylon tea although due to its price, it's often replaced with a locally grown Assam tea called Bai Miang (ใบเมี่ยง).

In the West you have to make do with what you can find. I managed to find some Camellia Sinensis tea which is a good enough replacement (I'm assuming, because it says Thai Tea on the front).

Instructions

This recipe is really easy to make. To show you the charm of the cooking school on Koh Chang, I've copied the recipe from the book:

I'm not sure where the "thin cloth" came from, guess you'll want one of those as well.

I think the last line is instructing you to pour the tea in the glass up to some level (W?) and then pour the milk mixture in over that.

I don't recommend dropping anything.

Considering this is supposed to be an iced tea, I'm assuming you also need to wait for the tea to cool down before mixing. That would make a lot of sense. You definitely don't want a melted-ice tea.

Thin cloth!! I bet that's muslin!! I have done from when I made paneer. That means all I need is to buy the tea then give this a shot!

Yeah something like that. Best way to get the tea out without taking the tea with it...if you know what I mean :)

It does. The condensed milk and sugar make it really, really sweet. And the ice makes it nice and cool. Perfect for a hot summer's day - something we don't have right now, sadly :)
