Can anybody help me understand why the payouts of all my posts are constantly decreasing? I'm a bit lost.

Rewards are paid out in Steem. The site calculates the value of Steem on, I believe a 3.5 day rolling average. It displays this as the $ amount. So the amount of Steem you are earning is not decreasing, but in the days following a decrease in the Steem price the $ amount will reflect that.
