Ingredients needed:
8 green tomato
1/2 onion
2 cloves garlic
1 green chile
1/4 cup pumpkin seeds
ricotta cheese
perley bunch
10 corn tortillas
Avocado
the mushrooms you like
Salt
province herbs

The tortillas are cut into 8 parts in triangles and roasted in a pan over low heat until crispy. They are separated in a bowl for later

Water is drizzled and the green tomatoes are added in pieces together with the green chile.
When this tomato is soft, wait until it is warm and mix it with the chopped garlic with a quarter of onion, the parsley, and the cheese with the water that boiled the tomatoes, remove the seeds from the chili so that not this spicy just with flavor.
In my case I had huitlacoches mushrooms and shitake dehydrated mushrooms that these last hydrate them in water of the same tomato that I had was hot and there I left them for half an hour.
I took them out there and added it to the final sauce so that it would take on the flavor of it, just like the huitlacoche mushrooms
All the liquefied is added in a pan with a little olive oil over medium heat and add the mushrooms and the provincial herbs and the seeds of pumpkins that first grab in a pan and then add them in a small grinder until make a mixture.
This mixture will make the sauce thicker.
It will also give more vegetable proteins around 12 grams of protein per dish.
On a plate put the tortillas in the bottom, add the sauce on top and the tortillas will absorb the sauce and put on fresh onion in strips and I will add some green beans boiled in the same sauce and avocado.
It is a very traditional dish in Mexico but with my original recipe.
It can be eaten as a side dish or as a breakfast and you can add an egg over easy.
