I love the idea of frying the skins to add a little extra crunch. I can imagine the flavor is pretty intense as well.

Oh yes, we always have the tendency to through away skins of all sort, but infact they are so good and we can make a lot of things with them! We can also reduce them in powder and use as seasoning!
