Orange Cake

When I saw oranges as the theme for this week I was really excited. I love oranges and really enjoy cooking and baking with them.
I usually like to have my entry in early and hate these last minute rushes. This week I knew that I wasn't going to be able to have my entry in early but I didn't plan on being this late.
First set-back was that we had a promo-steem crypto-currency seminar on Saturday which was a huge success. @starkerz spoke on steemit and gave us some great new insight and @deimus spoke about security and viewly. @patrickm was also there to share his crypto-currency knowledge.

So, sadly I was not able to visit my Saturday market to pick up my weekly groceries and in particular, my oranges.

On Sunday we went to To Hani in Cyprus - Tracey's Cookery school for a most amazing Sunday Roast lamb with roast potatoes and to my delight the orchard was full of beautiful oranges. I asked permission to pick some - and that really made my day. Now I had oranges off the tree for my recipes.

Enough about my busy week and looking after and feeding my "boys" and onto my recipes for the entry.

The first one turned out so much better than expected. I had some lovely home-made pickled cherries so decided to do a variation of crepe suzette and called it Orange Cherry Crepe Suzette.

First I prepared the crepes: We all have our favourite pancake recipes but this one I found in my late mother's hand written recipe book - and where I also found the recipe for the cherry and orange filling

230g Plain flour
2m salt
2m sugar
2 eggs
500m milk

Sift flour, salt and sugar into a bowl. Make a well in the centre of flour and break eggs in one at a time. Add milk gradually until the mixture is smooth. The batter should be runny. Cover and leave to stand for 30 minutes.

Cherry and Orange filling for crepes:

60g butter
90g caster sugar
Rind of 1/2 orange cut into strips
2 tablespoons of orange juice
1 tsp lemon juice
1 cup pickled cherries (a tin of cherries otherwise)
Tsp of brandy and Tsp of Kirsch cherry licquor

Now I didn't have any brandy or kirsch in the house but I found this amazing honey licquor

I have no idea where it came from or who bought it but I certainly hope I can find it again. It made the flavour unbelievable. I also substituted brown sugar instead of the castor sugar.

Melted the butter and added all the other ingredients into a pan and added the flour last for thickening.

@starkerz and @deimus were my guinea pigs for this for breakfast - and I got several compliments so that made up for the lack of the main image.png

Next I tackled the Orange Cake - also an idea from my late mother's cookbook

125g butter
1 egg yolk and 2 whole eggs
1 cup castor sugar
1.5 cups flour
10ml baking powder
2ml salt
125m orangejuice
5ml orangerind
5ml vanilla essence

Method:
Beat eggs and egg yolk add sugar gradually
Add sifted dry ingredients
Heat butter and orangejuice stirring well
Lastly add rind and vanilla essence.
Bake in a moderate oven for 20 - 25 minutes in shallow pans to make layers

Orange Icing sugar

Add **orange **juice instead of milk to icing sugar

Layer the cake with the orangeicing sugar and dust icing on top.

Believe it or not, I also served this up to the boys - but lucky for them - after egg and bacon - they didn't really complain.

Now that my entry is going in I can think of some really healthy meals to serve them for the rest of the week. Tuna and salad boys?

Awesome ... my daughter was getting worried that you wouldn't make, as after me you are her favorite contestant ... I think it has a bit to do with your name hihi ... and she thinks you look very sweet ! I will look forward to showing her your lovely dishes when she gets home from school ...she loves pancakes ...Both the pancakes and the cake look awesome ... and I bet they tasted awesome ...

Ah that's so sweet - you have made my day @globaldoodlegems. How old is your daughter? So happy to be her second favourite. I must say both were delicious - and the cherry and orange sauce for the crepes was the best I've ever tasted so I can also say thanks to my late mother for her inspiration

Wonderful best way to start the day is to be happy and smiling , she is 8 years old , so you have a little fan there !

You certainly did justice to those freshly-picked oranges!

The crรชpes and homemade pickled cherries look delicious! I certainly would love to wake up to a plateful of that goodie! And yet, it doesn't stop there. Your mom's cake looks delicious too. I like the idea of shallow cake and layering them. Just hand me a fork and I'll be ready to cut into those layers for a big bite!
