'Steemit Iron Chef 2018 Act 01 Round 13 : Easy lentil rolls for starter '

I like lentils very much as they have not only a high protein content and taste delicious but are also easy to cook. When I saw that the topic of the @steemit-ironchef - challenge for Act 1 Round 13 is about lentils I was very motivated to make an entry for this contest as a newbie though I hesitated at first. So my entry is a recipe from my mother "easy vegan lentil rolls" and they are a good starter for a buffet or brunch.

Ingredients:
1 cup of red lentils
3 cups water
1,5 cups of fine bulgur
1 chopped white onion
2 Tabelspoons olive oil
1 Tablespoon tomato paste
1 Tabelspoon red pepper paste
0,5 cup lemon juice
a bunch of finely chopped green onions
a bunch of finely chopped parsley
salt, black pepper, cumin and chilli flakes

Preparation:
Cook the lentils with 3 cups of water until they are tender (this takes about 10 minutes) and then add the washed bulgur into the hot lentils and mix them both well. IMG_20180413_173911456.jpg

Put the lid on the pot and let the lentil-bulgur-mixture soak for at least 30 minutes.
Meanwhile heat olive oil in a frying pan an sautee the chopped white onion until translucent. Add the tomato and red pepper paste and mix it with the onions.

Pour the onion paste over the lentil-bulgur-mix together with the spices, the lemon juice, the green onions and the parsley and knead the mixture well with your hands until you get a smooth and malleable texture (in case the texture is still dry, you can add a little bit more lemon juice or some water). Form the mixture into small rolls, sprinkle some chilli flakes for decoration and serve with lemon slices. Hope you like and enjoy my recipe:-)

My daughter didn't eat lentils that much while at home, but now that she's at university abroad and has become vegetarian, she's ALWAYS eating lentils. I used to worry sometimes that she wasn't getting enough protein eating it so much. ;)

Did you brown the rolls a bit after this, @zuckerzombie? They look nicely browned in the pic.. and delicioussss!!! ;)

Thank you very much @angelacs, I don't exactly understand what you mean by "browned" - the colour stems from mixture of the red tomato-/red pepper-paste and the orange/yellow of the lentils - it's not fried:-)

Mmm, once again you are cooking up a treat and using great photos showing what you are doing and the end result. I want to go and cook when I read these posts! :-)

I am very tempted to try a vegetarian month, and I would be happy to just shift my diet to being almost entirely vegetables with some meat and fish and eggs. I do enjoy cooking once I am actually doing it, it's just having to battle with Judy for the kitchen that gives me an excuse to do other things instead :-)
