GYPSY ARM

Some of them know the Gypsy Arm, like a cake with form of cylinder, filling of sweets, as: creams, marmalades, chocolates, strawberries, between others, and it has salted them, as be the taste, tradition or customs.

Nevertheless, any recipe has a history, in this case I will mention one of the amusing ones, the curious ones and the most widespread version of the origin of the gypsy arm; account that between the year 1800 and middle of the 50s the confectioneries were covering the craftsmen boilermakers, professionals of repair and maintenance of cauldrons; whose etnia, predominant age the gypsy, offering his services.

These craftsmen were specialists in well-worn copper, forge or lamination worked and of him, they were making pans, moulds and several kitchen tools.
Once, given his services to the confectioners; they were receiving, in addition to an economic compensation; some remaining piece of cake of the day. These pieces, they were coiled previously by the confectioners in a plate of biscuit. And to take them to him; the boilermakers were supporting the cylinder of clippings in his arm, while the machinists of the confectioneries were exclaiming “ what good stays the cake in the arm of the gypsy ”. This fact went so far as to become popular; so much, that began to produce this type of biscuits calling them a gypsy's arm.

The truth, this is one of so many versions of the origin of the gypsy arm; although a lot of time in my childhood I believed, which my grandmother was saying to me, that it stemmed from the honor of an ambulant baker that mutilated his arm, which descent was gypsy; so if my grandmother was very funny, he liked doing to us pranks.
Nevertheless, allow me to say to them that this cake coiled in the shape of cylinder, without importing the filling, is delicious.
Now then, I will share a recipe of my very simple mom.
INGREDIENTS
(For a gypsy arm)

02 big eggs
01 cup of sugar
01 cup of wheat flour (without leudante)
½ teaspoonful of dust royal (yeast)
01 spoonful of vanilla
01 spoonful of rum
02 spoonfuls of sugar (for the platón)
½ canister of condensed milk
02 pieces of parafinado role or role aluminum; if they have it, and if: not! Instead of role, you can use butter and a bit of wheat flour.

PREPARATION
He places himself, in the platón a piece of role; if you do not obtain the role, also it is possible to smear butter and a little of wheat flour to the platón, so that it does not stick. Then in a cup or bowl, there are mixed all the remaining ingredients, less condensed milk and two spoonfuls of sugar; and they are spilt on the role or the greased mould; it takes warmed baked previously on slow fire, up to gilding it well.

In another role parafinado, or aluminum, or bag cleans, two spoonfuls of sugar take a shower, to turn the miscellany over on having gone out of the oven, it allows itself to cool the biscocho and the condensed milk smears itself, for finally to coil it, making it wrapped in the role, puts to the fridge.
